The best red wines finish their fermentation in small  Barrique barrels made of oak. As they age another year or so vanilla and other sweet and fragrant aromas appear both on the nose and the palate. The tannin from new oak gives the wine a firmer, drier and more complex texture. If the Barrique barrel was “charred” a toasty or smokey character develops. The expert detects Barrique wine by the nose. We take care through barrel selection and length of aging that the oakiness mellows and integrates without becoming dominant.

Beerenauslese translated means “selected berries”. To attain the Beerenauslese category, the natural sugar content of the grapes must reach a minimum of 125° Oechsle, which means the juice weighs 1125 gramms per litre.
Vines are not able to produce such a high sugar level.
Autumn humidity supports infection with Botrytis cinerea (called Edelfäule in German), which shrivels grapes, thereby concentrating the sugar and acid.
These wines will age for many years, during which they develop even more complexity. Beerenauslese wines are quite rare and expensive and considered one of the world’s top dessert wines.

Trockenbeerenauslese translated means “dry selected berries”.
To attain the Beerenauslese category, the natural sugar content of the grapes must reach a minimum of 150° Oechsle, which means the juice weighs 1150 gramms per litre.
Wine yeast frequently has trouble fermenting these wines, they often contain only 6 percent alcohol (from a potential of 21.5 percent)

Eiswein “ice wine” is made of picking frozen grapes (-7 Celsius and lower) on the vine and then pressing them before they thaw. Because much of the water in the grapes is frozen, the resulting juice is concentrated—rich in flavor and high in sugar and acidity.
The resulting wines, although different from the Beerenauslese, are similarly extraordinarily sweet, yet balanced by high acidity.

All our dessert wines are excellent candidates for long aging.
